Jammy Braised Tomatoes
This is one of my go-to things to make when Iām hosting because it makes my whole apartment smell so warm and inviting. People always think it took a lot of effort, but it is truly the easiest recipe. It feels rustic and impressive without requiring much at all.
I love serving these with day-old sourdough, either homemade or a Tartine loaf. As the tomatoes cook down they get jammy and the garlic turns soft and sweet. The next day might be even better because the garlic has soaked into everything.
What you need
2 pints of tomatoes (I usually use the organic tomatoes from Costco)
1 cup olive oil
4-8 large cloves of garlic
Fresh basil
Salt and pepper
How to make them
Add olive oil to a skillet and heat it over medium heat. Add the tomatoes, sea salt, pepper, basil, and garlic. Cover the pan and let everything braise for about 20 minutes.
Take off the lid and remove the pan from the heat. While it is still hot, place the skillet under the oven broiler on medium heat. Let the tomatoes broil until they begin to char, about 5 minutes.
Serve warm with sourdough or spooned over burrata. It is simple, cozy, and always a hit.
